While many ethnic restaurants (Chinese, Italian, Indian, etc.) already provide plenty of options for vegan diners, establishments like Boston Market and Taco Bell are now getting on board.

Breakfast Must-Have's

What do vegans eat for breakfast? Well, this vegan loves Granola (My fav: organic banana granola) w. Almond Milk and fresh fruit. Yum!

You can never go wrong with a smoothie either! Just try blending some of your favorite fruits (& veggies too). I'm partial to a banana, mango, pineapple, coconut, chia seed combo.

Are traditional hot breakfasts more your style? There's something for you too! Go for some Tofurky sausage and vegan pancakes. Check your local grocer's freezer for more suggestions.

Lunch Staples

There's nothing like lunch with the girls! Usually, when I play hostess for our gatherings, I make my famous Cranberry-Citrus Spinach Salad. It sounds fancy, but it's really quite simple. Just top a bed of spinach with some sliced red onions, black olives, dried cranberries, and mandarin oranges. Drizzle a little raspberry vinaigrette over the finished product for some extra flavor. Easy, right?

Need something heartier? Don't worry; I got you covered! What do vegans eat when they're out and about? Whenever I'm in the city, I visit my favorite Falafel stand. If you're calorie counting, you may not want to indulge in this dish because it is deep-fried. However, it is full of vegetables and on whole wheat pita. That has to count for something!

In a rush to get dinner on the table? Reach in the freezer for those veggie burgers. Partner it with some fresh veggies, or fries (it's ok), and voila! Dinner is served.

Preparing for date night? What better way to dine with your honey, then over a delicious plate of pasta with marinara sauce....It's so Lady & the Tramp! Now that's romantic. Add some candles and soft music, and you have the perfect evening.
